Port Orleans Resort's Beignets




Ingredients: 
1 pack dry yeast
1/2 cup sugar
2 eggs
7 cups flour
1 1/2 cups warm water
1 tsp Salt
1 cup undiluted evaporated milk
1/4 cup soft shortening oil, for frying
Confectioner's sugar

Pour the yeast over warm water, and stir till dissolved. Then add the sugar, eggs, salt, and milk. After combined, mix in the flour and cover and refrigerate over night. After it has completely set, roll out to desired thickness (about 1/4 inch) and cut into desired shapes. Fry on both sides for 30-60 seconds and cover in powdered sugar. *Note, the dough can see chilled for several days before using.
